Ha according to a TED talk I saw, REAL Chinese people don't even recognize most of what we consider Chinese food, to be Chinese food.  Even the iconic fortune cookie, according to the talk, was originally created by a Japanese company and were served in Japanese restaurants here in the US.  The Chinese here in America sort of co-opted the treat when the Japanese were interned in camps during WWII.  She said "they saw a business opportunity". lol
