That's because BF3 uses Client Side lag compensation not Server Side, It looks smooth but it's just as bad as MW3.

If someone on the server has a 200-300ms ping you could be round the corner on your screen & still die because on the other persons screen you didn't make it round the corner.

Black ops 2 will use Ping/Latency to search for games now instead of region (Just like MW2/COD4) So hopefully this will stop high pinged players from all over the world joining our lobbys :)

Black ops/MW3 use region based matchmaking & we all know how terrible that worked out.....
